As well as having various event souvenirs there are often refreshments on sale.  These obviously differ depending on the event but excluding alcohol the most popular choice of refreshments with typical costs are as follows:

When budgeting for refreshments you must not forget to add on VAT (Value Added Tax).  This is currently at a rate of 17.5%, and is automatically added to most of the goods that you buy from shops.

When thinking about refreshments you need to consider whether or not there are heating, cooling or cooking facilities available.  This might effect the refreshments that you provide.

Another consideration to be taken into account is the number of staff required to sell these refreshments.  Obviously this depends on the number of people coming to your event but typically you should allow 1 staff member per 100 people.
